How food hygiene ratings work in Scotland

In Scotland, food businesses are inspected under the Food Hygiene Information Scheme (FHIS), run by the Food Standards Agency with Scottish local authorities. The result is a Pass (the business meets the legal requirements) or Improvement Required (one or more issues were found that must be addressed). Unlike the rest of the UK, Scotland does not use a 0–5 numeric score, so we present Pass / Improvement Required figures here rather than a star distribution.
